We are planning to walk the Le Puy route starting on March25/26. Is this too early? Does any one know of a baggage transport company operating from those dates?

Get MMDD when in Le Puy , the transportation companies are listed in the first few pages .
Once you arrive there the Hotel, Gite or whatever will advise.
This method of walking is very popular amongst the French.
Safe trip and watch the distances when on the Aubrac

Plan for cool and rainy weather (you might get a pleasant surprise, with a few fair days thrown in) as you pack. Many lodgings are only open 'from Easter to All Saints' -- which makes April 16 to Nov 1 for 2017. So it is imperative that you make a plan pronto as some towns may have zero open lodgings prior to Easter. The weekend before Easter (ie the Saturday before Palm Sunday) you will likely start finding many other walkers; that is about the time you will reach Conques. An early reservation there would be smart.
 
Is it possible to send a baggage to SJPP (postal office, gite or baggage service company?) when I reach Conques? And how much will that cost? Thsnks.

Yes it is possible to address to the SJPP P.O (POSTE RESTANTE).

However, most P.O in Europe only hold parcels for two weeks (15 days).
Perhaps you could contact the Pilgrim Office in SJPP to see if they will hold your parcel (if you are longer than two weeks, which is highly likely).
Or perhaps a gite where you plan to stay....?

I don't know of any baggage services in France,, but I'm sure they exist (tourist office will assist).
Post Office rates will not be high as it is a domestic service.

I will send an email to pilgrim office in SJPP and the gite I plan to stay.
Hope one of them can keep my package for about 25 days. I plan to visit another part of Europe and I need some more "supplies".
