The Portuguese coastal route has some different characteristics to the CF. I think (though someone please correct me if I'm wrong!) Vigo is the first place you'll come to with a non-bookable first-come-first-served albergue (Xunta). And that is after nearly two thirds of the journey.
In terms of your planning, May will likely be a busy time. I'm guessing that much of the pilgrim/backpacker accommodation will be booked up already. That said, the stage points are less significant/important because any village or small town beside the Atlantic here feels good. So the numbers are probably more evenly distributed along the Way
