And what @SabineP posted gives a good taste - I would walk around Alameda Park (also called Carballeira de Santa Susana) and see what festival booths they have set out. There are also sightings of the big-head people, both in a parade and a dance in Praza do Toural, I believe. Your best bet might be to ask your hotel or albergue host if they know the best things to see/ do while you're here.
