What are some of the towns or hostels that you recommend going to / staying at? Favorite and least favorite?

When are you walking? Some of my favourites are only open for a few months of the year.
eg:
San Anton from May to September
San Nicolás from June to mid-September
Boadilla from April to October
Arroyo de San Bol - late April to October
