Hello and welcome! Answer your question: twice. Salamanca is one of my favorites among the cities on the Camino. It has an amazing combination of the atmosphere of a historic city and the beautiful architecture and youth and freshness created by young people (it has been a famous university city since 1250). It would definitely be a shame not to dedicate at least one extra day. Better two. The Albergue is in the center, very close to the cathedral and has a beautiful garden (park) overlooking the river.

Am hopefully continuing the VDLP out of Salamanca but not until late April. I'd agree with m108 that Salamanca is one of my favorite cities (perhaps in the world). It's worth a couple of days to get rid of jet lag, get back into the swing of Spanish, and just slow it down a bit for the walk.
