It depends on whether you want to finish your Camino in Santiago or not. I think that it's very satisfying to "complete" the Camino in Santiago, but others don't mind doing other portions that don't end there. You could plan to start in Sarria - about 5-6 days, then continue on to the coast after Santiago for another 4-5 days.

Are you fixed on the Frances? If not walk the Ingles from A Coruna and then out to Fisterra or Muxia. Good walking, hotel / private room accommodations available.

St Jean to Logrono is 170km, so that could be a good destination for 10 rather short days. If you end up wanting to walk more, Pamplona and Logrono would be excellent choices to spend an extra day.
And as others have said: That part of the Camino is just great, be it scenery or history.

Could someone recommend which stage may suite us ( married couple in 60’s) in Sept 23. Not too tough !
Looking for 10 days max in total
Hotel stays would be preferable
If it is 10 days total, and especially if you have to travel far/overnight, I would suggest:
Day 1--travel to Madrid (if from the US, it would likely be overnight)
Day 2--travel to Sarria
Days 3,4,5,6,7,8--walk from Sarria to Santiago (if you are really strong walkers, you may be able to do it in 5 days, without a rest 1/2 or 1 day).
Day 8--a day off in Santiago
Day 9--1/2 day in Santiago plus travel back to Madrid
Day 10--fly out of Madrid (if you are going back to the US, the flight times are usually early enough that you will want to get to Madrid the day before (on day 9).
