Mspath, I’m starting from Bilbao in June on the Camino Norte, I’m wondering will I need to take the credential to a church to have it officiated?

Not at all; there is no official begining stamp. Just have your Credential stamped daily where you stay or eat, etc. However do have it stamped twice a day for example where you start and stop during the last 100 km. It is only those 100 km that count towards your Compostela.
