I have taken s bus from Santiago to Viana do Castelo a couple of times.
You have to get to the bus station in Vigo and see the time tables. Some buses are direct some with a change in Tui or Valenca.
So when you get to Vigo or Valenca there might be more options from there.
So no worries!
If you want a ride across the river Minho with Captain Mario you do not have to and should not walk to the city center of Caminha at all. Captain Mario is operating from the beach hotel a couple km to the west of Caminha.
To reach him you will keep on walking on the western side of the railway...

I was in SDC - when the final stage of the La Vuelta reached SDC in 2014. And I saw Alberto Contador and the others bicycling the final stage and greeting them in the evening show at the Obradoiro.
We saw the teams on other stages also in Portugal and in Galicia.
It is up to you and how you feel in Caminha.
Maybe you will decide when and what time you will be in Caminha.
The ferry from Caminha to A Guarda does not cross the river Minho on Mondays.
Low tide changes/ cancels the time table sometimes.
