I think the name "Celtic Way" in this case refers to the section from A Coruña onwards, right? As opposed to the Ingles from Ferrol.

The posts you see about waves of walkers are all about Saint-Jean-Pied-de-Port, which is weeks of walking away from Le Puy. So you won't need to worry about those posts specifically.

Paul above is correct that you can go very barebones. The only things you absolutely need are a bicycle, money, water, clothes to wear and a helmet, and a kit for flat tire or broken chain.

I am mightily impressed by some of your stages! Especially that first day... I found climbing out of Le Puy to be the hardest part of the entire trip, and you did twice my distance that day - bravo!
I used Correos for shipping the bicycles from Santiago to the Netherlands just last week.
Indeed Correos does not dismantle the bike for you (anymore), you have to do that yourself. But they do have all the tools needed, the boxes, and they take care of the shipping.

I used Polarsteps, which worked quite well. Easy to use, low-enough battery cost.
The mileage on it is not perfect - it tracks your location every 15 or 30 minutes and then draws a straight line between those locations. But unless you're a very fast walker it should be a close approximation...
I have only cycled the route, but I think my answer would have been the same if I had walked it.
Two things to consider:
- Arriving in Saint-Jean is loads of fun. Walking (or cycling) through the pilgrims' gate -- much preferable to arriving by bus or train, I would say.
