@J Willhaus has an intriguing idea about the Ciel islands. Otherwise I’d consider getting to SdC, and continuing on to Finisterre or Muxia, then bus back to SdC.
You don't say where/when your existing bookings are, which may impact your extra day options, but you could go to SdC and then do 3 days to Finsterra - then take the bus back to SdC.

We hiked up O Cebreiro today and it was raining quite heavily , then the rain turned to snow. Thankfully , we’re staying in O Cebreiro tonight in a warm and cozy room getting dried out!
All people tell you to carry water. So I always carry (on the CF) 500 ml water. And I drink beer. That way I always have enough water, bc I don't touch the stuff.
