Should I understand that to mean that albergues and indoor spaces in general will be chilly because they're not really built with Winter in mind? If so its an important point but I guess it can be counteracted by a decent sleeping bag etc... Also there's cold and then there's humid cold which...
I originally wanted to restart my camino where I finished last time, Burgos. However, I'm concerned that the weather on the meseta might be particularly unkind, am I likely to spend all my time walking in freezing fog etc...?. Trying to make the right route choice here so greatly appreciate all...

Oh.. Might that have been the place just opposite the church/cathedral? It was the culinary highlight of my camino where they served frozen fish as they main course....that would have been ok (what do you expect for 10 euro) had it actually been deep-fried long enough to defrost it!!

Someone had mentioned this as one of the advantages of opting for the top bunk... I would have thought not too but just wondering what others thought.
The farthest I would go is to hang clothes ("clean" only ;)) off the rail at the end of the top bunk...meaning the person below really doesn't...
So here's a question. Who has rights on the hanging space from under the top mattress, I kind of thought it would have been the bottom bunk since it forms a sort of curtain which they may or may not want...but then again, its hanging off the top side...... ;)

Just as encouragement I think you will be fine. I never walked with a pack before I went away so I did as suggested, i.e. started easy and took care of myself - my weaknesses toughened up en route. Also I'm so glad that I listened to the wisdom of many posters and kept my pack weight pretty...

Burgette is reasonably sized and only 2km down the road.. Also, the lady in the bar/cafe in Roncesvalles ferried some people on to Espinal a few days back..... I think you will find options
