It is way better to reserve ahead of time. Trains often sell out. It is a big risk to wait until the last minute. Easy to download the RENFE app. Schedules are usually published no earlier than 60 days prior to travel for most trips.

Look at my response #21 above: I checked and they do not have a timetable for Madrid-Oviedo. When you book with third parties you may lose your money if you are delayed and miss the train. You have a fighting chance if you book directly with RENFE, and pay a little extra for a change.

A Quick Look on Rome2Rio shows frequent ALSA bus trips from the Santander bus station to Oviedo. Bus = 2h 15 minutes. Train is nearly 5 and 1/2 hours.
The airport is 5 km from the bus station with frequent local bus access trip duration about 15 minutes. Taxi too.
