This is true in some airports but not in all. It depends on the layout of the airport. I have taken internal flights in Greece and then had to go through security again for my connecting flight.
Despite the fact that booking.com charges accommodation providers a fee, as a customer it is often cheaper to book through them. I do like to go direct, but if it costs me €20 a night to do so, I won't.
I find that, if the accommodation uses fixed prices on their own site, at quiet times it is almost always cheaper to use an aggregator. Likewise, at busy times you (usually) get a cheaper deal going direct. Sites like Booking.com use dynamic pricing which responds to demand.
Definitely book Roncevalles. You'll be lucky to get a bed at Orisson, but it's worth a look. There is also Borda, or consider taking the Valcarlos route and breaking the journey there.
To be honest, I don't mind getting lost. I think it's all part of the journey. Usually I carry a paper map that allows me to find my way back to where I should be eventually.
I don't think I would would want my family at home worrying that I might be lost because I stray from the designated path. That sort of tracking sounds incredibly stressful for all concerned.
Not sure about Spain, but in many countries regulation is driving a return to the old-fashioned way. Here in Greece you can't put a property on AirBnB without a registration number and there is a lot of bureaucracy to get the proper registration.
The schoolchildren I was teaching in Spain certainly picked up American English from somewhere. Possibly netflix or similar, but there were also a lot of children from Spanish-speaking parts of the Americas.
I also have good experiences of hiring cars in Spain, Portugal and Greece.
