I bought a SIM card from UK provider 3 via Amazon.ca prior to my Nov trip to France and Germany and my daughter did same for her trip through Greece Italy Spain and Portugal.
I think was 30 CAD and got it all set up easily before departing Canada.
30gb and huge amount of minutes. My daughter...
Loved Irun to Bilbao but did bus in the last day to Bilbao from suburbs and subway to Portugalate on way out of town to avoid suburban walking.
The Camino is weird - you can have a great day of walking and thinking on the drabbest of stages and miserable day on the most beautiful.
I plan to redo Irun to Bilbao - we loved the countryside, the people, everything. Plus it will make you stronger for the rest of the route.
We had a small Camino family that we met often despite rest days side trips etc.
Hope you have fun.

Particularly enjoyed Maggie Ramsay’s book. Description of the landscape and the food was great.

Hotel Los Angeles in Santillana had a couple of rooms with patio overlooking park in front that we enjoyed.
We also had some rest days in Llanes that were terrific
We did Norte/Primitivo for our 50th birthday in 2016. I planned first week badly - links to blog under my username- and this meant some stupidly difficult days ie 42km stage from Zumaia over two small ranges etc.
But even with that we managed. Going back next Spring to walk some of Voie...
