I have done a number of Caminos and have always held that booking accomadation ahead is a bad thing. It locks you in, reduces the freedom I feel walking without a schedule, etc. But….

Some cash is essential. Even places that take card sometimes specify a particular card eg MB cards in Portugal. That said the pandemic has certainly shifted the balance away from cash a great deal.

The trick is to only buy for one day at a time then keep it as cool as you can. Wrapped up in spare clothing or whatever. Overnight you can cover everything with a damp cloth and the evaporation keeps everything cool.
For me cheese and chorizo can last a week, although softer cheeses...
