Walking the Meseta last year from Burgos to Astorga was the best Camino experience I have ever had, the calm, the quiet, the ability to go inwards and to really get close to the land that god created made a great impression on me. Enjoy your time there it is very special.
Been Camino
I did their Coastal route on the Portuguese and it will answer all your needs, not crowded, plenty of accommodation good food, less expensive than the Frances and very much doable in 10-12 days. I did it in May and great weather. No problem being alone or in a crowd.

As a 70 year old who walked the Camino Portuguese in May I found it quite doable and not stressful. Consider the Porto coastal route, walk along the beach on the boardwalk and enjoy the many great accommodations available. Just right for your Dad!!
I had a 50 ltr backpack in the event I chose to walk a stage with the backpack, also in the event there was a screw up at some point which luckily never happened.
