You'll have wet feet, but that's ok. They'd be wet even with waterproof shoes. Once at your lodging, pull out your insoles and stuff newspaper into your shoes. They'll be dry enough for the next day. You don't need a pack cover or a rain jacket if you're wearing a poncho, so leave those at home...
I did not use hiking poles and didn't feel I needed them. The terrain was not steep or technical on this route, so I didn't need any help with stability, and my knees are fine. But if you like them for knee support, you should use them. Bom Camino, enjoy the beautiful walk!
