To me it is not a big problem. I think if you pass someone or are passed by it will soon be clear, if the other person wants to be involved in a conversation.

I agree that making reservations is not spontanuous with regard to the aspect of where you sleep that night. It createss more possibilities to act spontanuously in all/ many other aspect of your camino
I don't completeöy understand your point, albergues that don't accept reservations still exist and hopefully/ probably will exist in the future. People who want to make reservations are in my opinion not a problem for other ones who want to stop at the place and moment they want to. Like I said...
