If you are wanting to walk on the Camino but not necessarily finish in Santiago, I recommend the Primitivo from Oviedo to Lugo.

An idea I had (but will never do) was to set up a van as a trail magic spot like you have suggested. Stay in that spot for a few days, then move west on the trail 100 or 150 km and set up again. See how many of the same people you could encounter!

My wife is a teatotaller, and I'm more like you. We have done the Camino Frances two times ('14 & '17) and it is no issue. You simply swap the wine for water. My guess is that at any given meal 20% of the people choose water.
