I've walked from Baamonde to Santiago in two days and, last year, from Lugo to Santiago - having a hotel reservation in Santiago and a flight the following lunchtime worked for me - but does need some 10 hours walking each day

Protein bars are overkill for most people on the camino especially if you bring enough bars for the whole walk - I can get by walking a long day on just liquid and chocolate but a banana would be a perfectly good alternative to protein bars
Surely, if it can take 15 minutes to issue a single compostella and you need to cope with so many pilgrims then automation to a greater extent is the only answer

I had already bought my ticket for the Portico of Glory but did indeed join the queue at 7.15 the following morning - my main concern was for the poor security guard who had to spend hours telling people that there would be no more tickets handed out that afternoon when a notice on the door...
But also note that if you arrive (like I did at 6.20pm last Friday) after they have stopped issuing tickets for the day, then you will have to go back the following morning
