As @Isca-camigo suggests, I'd also recommend the easier path starting in Sahagun through to Leon.
Sahagun is the halfway-point of the Camino Frances - so this will add some significance for you and your parents. Also, as an added safety feature this part of the camino...
You may want to save yourselves a few quid by taking your backpacks as carry-on. I have a 32L and never put it in the hold. If you have walking-poles, carriers such as Easyjet will allow you to put them in the hold free of charge. Buen Camino
Casa Magica one of my favourites in 2016. Many good memories of the atmosphere created during the evening meal. So glad it has not been allowed to disband. If I ever walk the Frances again it'll be on my hit list.

Stayed at the Hostel Entresuenos a couple of years ago. It's a converted shop/office and situated opposite the Pinxto Bars. It was single bed dorms then - very clean and good facilities. Shown on Gronze & Booking.com. 10E.

My two-penneth is to remember that where you are going is not the back-of-beyond. If you need anything, you are normally never more than a day away (often a couple of hours) from modern-day services : medication, walking gear...

Due to the 'Bus Strike' this year, I decided to walk to the Airport, which as you know is on the Frances route in reverse. As I had time-to-kill it took me 5 hours (inc. 1st, 2nd breakfasts, elevenses and lunch:D).
I can honestly say that there were groups of pilgrims about every 50 meters...
