If you are worried about leaving your bag while you shower you could always strike up a conversation with someone who looks trustworthy and offer to watch each others bags while you shower..
You have had a few answers to most of your questions so I will only comment on your Camera selection. If you are not atleast an advanced amateur don't bother with the DSLR. Its takes time to develop skills and I'm guessing you will resort to the auto settings rather than the manual settings...
