I found an apartment on Trivago & Bookings that is $104 CAN / nite for an entire apartment. Try booking something like that and then you'll be a savior for another pilgrim or two who can stay with you. :)
My favorite 2 towns along your route were Pontevedra & Valencia. Padron looked nice, but Valencia just intrigued me more. Tui is right beside Valencia so you could stay in either and check out both.

I found Lisbon to Tomar to be a lot of road walking with little to appreciate nature wise. I also met few pilgrims. However it made me really appreciate Tomar onward. If I had limited time I'd rather start in Tomar and continue to Muxia.
I'm sorry this happened to you. I was also flashed on the Portugese route between AAV & AAN. I ended up bonding at the AAN alburgue with a lovely Italian lady who experienced the same. The hospitaleria convinced us to make a police report. Despite being flashed before when hiking in Canada...
