We stayed at O Cruceiro (986 540 165) in Caldas de Reis. In Padron we booked Apartment Salome via Booking.com. It had three bedrooms, a kitchen, sun deck and two bathrooms. Two of the bedrooms had three twin beds in them. If you have multiple people staying there, it's a great buy.
We just finished walking the Camino Portuguese on September 24th from Porto. During the earlier stages, it wasn't difficult to find availability. As we got closer, we found that many places were booked solid, so we ended up booking two days ahead.
I too would advise checking again. I just took the train from Santiago to Madrid on Monday of this week and there were empty seats. It's a beautiful train ride to Madrid Charmatin

I live in Dallas and flew out of DFW last year on American Airlines miles. Flew to Bordeaux France via London and then took the train rest of the way into St. Jean. I'm sure that there are quicker ways, but I wanted to see the countryside via train as well. Are you from Texas? Buen Camino
