We did the Ingles last June and walked to Neda for the first stage. Then Neda to Pontedeume. I thought at the time, walking it in one stage would certainly have been doable. A few small slopes, that are longer than steep, but mostly level. We stopped at the beach just before entering...

As far as the downhills, my wife is also on the "I don't like downhills" bandwagon! But she had no issues. For whatever reason, the downs weren't an issue.

We are going back and forth between the new albergue in Sigueiro, or the Albergue de Delia, which many have commented on. If anyone has recent experience with Delia, please chime in.
