I love winter caminos! I have done st Jean to the sea three times in the winter and am starting my fourth on Jan 11. Never had a problem with an albergue or a place to eat. I live in Florida USA and found the temp on the winter camino to be very comfortable. See you in Jan!
I stayed in municipals whenever possible but used cash for everything (train to SJPDP, bus from Finnesterre, all meals ect and returned home with about 300 euro.
On all three Caminos I took 2000 euro in all 20 euro notes. Divided them into 4 bundles of 500 euro each and heat sealed them into empty candy bar wrappers. I kept each bundle in a different location. No problems.
