I like it! Keep it simple and use an average of the above numbers, i.e. 36L and 7kg.
I used an Osprey Stratos 36L and it worked well for me on the CF. I believe it was around the 7kg mark fully loaded.

Very nice work! We're interested in the Mozarabe, especially the part from Granada to Cordoba. One of the less popular routes, but very interesting historically. We plan to walk from Granada to Merida, depending on the weather and route profile, and then jump over to the Portugues.
We walked the CF in September 2019 and had only 1 or 2 rainy days. Our REI rain jackets kept our upper body dry, and our Osprey's built-in pack covers also worked well. However, we didn't have rain pants, so eventually the water running down soaked everything below the jacket: our pants, socks...

Replacing that Vibram outer layer is only worthwhile if that is indeed the only thing that is worn out. Especially if you have very soft soles, made up of a thick layer of some soft material, those tend to compress and lose their shape over time. Putting a new outer layer on top of that...
