Thanks for the detailed review, @BobM. Did you try ViewRanger? You don't even have to input start and end points - just click on the map to set waypoints and it will autogenerate a route. Now this is much easier done in the desktop version, of course.
Or you could use a trekking app that lets you plan and edit routes. Of the three or four I tested, I'd say ViewRanger is the best, with Openrunner coming in a close second. You can use it to plan your walk on your desktop and then use the app on your smartphone to follow the route or export it...
