The only time we ever checked a bag to Spain, it was lost by the airline. Fortunately, it was just an Ikea bag with our poles, and we had carried on our packs, so after a quick trip to the local Decathalon we started walking as scheduled.

We used umbrellas with the Gossamer Gear clips on the Primitivo last year, and they were great. Right up until I lost mine. And then my solution pretty closely resembled your original idea - velcro and bungees!
I have no idea why I packed a random velcro strap, but I'm glad I did.
I brought some 8-inch nylon zip-ties for exactly this reason. You can get the kind you can unlock from most hardware stores.
Won't stop a determined thief, but it will slow down the casual one enough that they'll move on.

I did not have one on our 2013 Camino, but I'm definitely taking an Opinel on our upcoming Camino.
Nearly every European we walked with had one, and they were constantly useful - for slicing up chorizo and queso if nothing else!
To be fair, I've only had the pack a couple of weeks now. I'm beginning to think that the pack favours tall, narrow stuff sacks as opposed to the more square-shaped ones I have. I'll update as I figure these things out.
The major thing was (2). That and it's very tricky to pack it so it balances correctly. It took him a week or so on the Camino to work it out, and I still don't have the hang of it.
The main compartment is rather narrow compared to most packs its size.
I did my first Camino with an Osprey. A great pack.
