They use WhatsApp at the Diomondi Albergue so you could contact them while on route and ask any questions you may have about bed space, blankets etc. I was on the Invierno just over a week ago and they were very prompt and helpful with their replies!
My first thought would be Monforte de Lemos, it's one of the bigger stops along the way (if not the biggest!). To be honest, I didn't spend too much time exploring places at the end of the day - combination of weather, the small size of the towns etc. - so others on this forum who've also walked...
