Airport connection CDG

Time of past OR future Camino
fall 2018 or 2019
Arriving from US at 07:30 on a Tuesday in September, with a checked bag. Will I likely be able to collect the bag, clear customs/immigration, and make a 10:50 EasyJet flight to Biarritz?

Yes and No. My flight arrived about an hour late but I did manage to make it on time for easyjet flight but that didn't matter since the easyjet flight came 1.5 hours late. I do believe that you have enough time.
 
You should be ok, provided your flight lands on time. There are 3 main terminals at CDG, each of which is subdivided, so it can get complicated. There's a free shuttle between terminals, but sometimes it's quite a long walk to get to your airline's check-in/ security from the drop-off point, especially for the budget airlines. No idea which terminal you're arriving at, but Easyjet is in Terminal 2D.
