there should be good Spanish learning places in Almuñecar, it is a fairly large town (and it is a lovely place too!)
I am not 100% sure what the best route would be from the coast to Granada, but I would say your best bet is
Almuñécar-Molvizar-Guajar Faraguit-Pinos del Valle-Restabal-
and then you would have two choices:
1) Melegis-Murchas - Durcal-Dilar crossing over Ermita Vieja (1400 meter abose sea level, with astonishing views to Granada city and the mountains of Sierra Nevada, more strenous, but a nice stretch
2) Melegís-Cónchar-Padul-Dilar, along the course of River Durcal, then crossing the wetlands in Laguna de Padul, and following a flat route to Dilar
Then, it is Dilar-Gojar-La Zubia-Granada
There should be some accommodation in most places (not sure about Molvízar or Guajar Faraguit)
As a reference, Durcal-Granada is 30 km over the mountains, and I would say Almuñécar-Dúrcal is doable in 3-4 days (I cannot help using Durcal as a reference, it is my home place!)
whenever you are set to go, do contact me and I will try to walk with you for some stretch of the way.
Paula Constant did this route and wrote a blog, she should have more information if you want, in the meantime, you can find some information about her Camino here

You might be able to contact her through her web site, she is a nice, friendly girl.
Buen camino, amigo!
