it's safe. and yes, i'm a guy, but my friends who are ladies of all ages have walked the Camino solo, some several times, and have never felt threatened or unsafe. in any case, i doubt you have encountered anything concerning regarding crime rates. you may also find some reassurance in the fact...
I doubt you'll get bored once on the Camino.
Use a taxi when you run out of gas; I am assuming your party wants you for spiritual/religious guidance/leadership and not actual walking guidance.
Break in your hiking shoes/boots before you arrive, that's 50% done.

go the extra mile and stay in the historic centre of Pontevedra, the albergue's not near
don't skip Santiaguiño do Monte in Padrón, it's worth the effort
if diplomas are your thing, you can request the Pedronía in Padrón
Buen Camino!
most likely rain, and chilly in the mornings. your second stage will be tough, up to foncebadón and even tougher coming down the mountain - pace yourself.
Buen Camino
there are some hills, but nothing not manageable, especially if you are pacing yourselves. you may want to study your accommodation options if limiting your stages to seven miles, even in Spain there may not always be a place within that distance.
