I read some questions about vitamins (or magnesium) availability in Spain:
1) The original question was about France (Podiensis), not Spain.
2) It is very likely you can find all this stuff in France or in Spain.
That is the point: distinguishing between:
- "bivouac": you put your tent in the evening, and remove it next morning
- "camping": you leave your tent mounted in the day.
The first should be allowed, or at least tolerated, nearly anywhere. I have some pilgrim friends who has mounted their tent...
On Podiensis, the weather should be fine. But take care that arriving in Galicia by end of October, beginning of November probably would mean rain, rain, rain.
Last October I walk from León to Santiago (being in Melide on October, 31st): 12 days of walk, 12 days of rain.
Galicia is very wet.
Perhaps the best option is to take the Célé variant, got to visit St Cirq-Lapopie, and then join the usual path via Concots and Varaire.
I do not know about the markup there, but if you download a smartphone app like mapy.cz, the path is shown.
I took the Célé variant 3 years ago, and I have discussed with others:
- Rocamadour should be your choice if you like shrines. Notice that the "true" Rocamadour variant does not end at Cahors, but at La Romieu. I heard that it is peaceful there.

I cannot give you advice about Gebennensis because I do not walk on it. I met a number of people who walked on it: it seems to offer nice sceneries but is demanding and quite lonely.

I am not very fond of booking ahead, but you should know that there are very few accommodations on the Voie du Célé. Furthermore, this nice walk is not only followed by pilgrims, but also by hikers (following "Le Tour du Lot", for instance).
