I did the same and first set out with Lidl rucksack and shoes. Over the years I invested in better shoes that suit my feet and an Osprey rucksack that fits me.
Agree with the others, fast drying, light clothing is best. Look at Berghaus and Rohan on-line Sales.
I found these, with non slip soles , at our local sports centre. They were great for padding to / from the showers. Very light weight.

A packable holdall works for me checking in poles and rucksack together.
Also...if you want to carry your comfortable rucksack and send on any heavy stuff day to day, pack that stuff in the packable holdall.

Ive similar kit for winter walking in the UK. A Berghaus waterproof jacket with hood. Usually a base layer and a lighter weight fleece worn beneath the jacket (It does have zip in fittings for a winter fleece which I bought on ebay, but dont really ever need )

I totally agree with icacos.
A light rain jacket will also give you a protective layer from wind and cold. Poncho is the best protection from the heavy rain if there's no handy shelter.

Your Osprey rucksack will serve you well. I suggest you and walking partners buy a packable holdall. Wear your rucksack every day but between you pack items you don't require during the day (sleeping bag, wash bag etc) into one holdall and send this ahead.

Last year in September on the Baztan it was mostly warm and sunny but sometimes rainy. We had Summer gear and ponchos or light rain jackets. As always, layers are best.
Monastery and albergues had blankets.
