I have not walked the VdlP (yet), but I visited Sevilla last year and it´s a wonderful place! I hope we never get 'cured' of the camino bug!
It took me 11 days through the central route, I'm average fit. Could have done in 10, but would be tough and rushed for my pace.
Do you have only 8 days? Maybe take the train out of Porto and start ahead, like in Barcelos, which is a lovely place as well.

I don't know about the boat ride, as I have not used it. But for the trail, there is plenty of accommodation, specially if you are mixing albergues and private places. There are some lovely small inns along the way, and the food is great in that region.
