I wouldn't call it a rule of thumb, but the rhythm of my Camino Day usually goes something like this (depending on all the variables and opportunities others have mentioned):
Walk 2 hours; short break of 10-15 minutes (shoes off, maybe first or second coffee):

I don't stick to this rigidly, but my general rhythm is:
Walk two hours, have a brief stop (15 min or so) to have a snack, take off shoes and put back on;
Walk two hours, stop longer (maybe lunch?), take off shoes and change socks to the opposite feet
Walk two hours and a short break, take off...
I completed La Plata / Sanabrés a week or so ago, and my 'stages' from Ourense were:
Oseira (31km); A Laxe (32); Dornelas (22); Deseiro (20); Santiago (11).
So that's 5 days, with a very short final "day" into Santiago. I'm 75 and average about 4.5km/h.

I'm currently a pilgrim on Via de la Plata/Sanabrés. I won't say where I am but let's just say nearing Ourense. There seem to be very few people on the route (avoiding words such as pilgrim).

Most of the comments here relate to costs comparisons for us, the users. But we need to remember, too, that bxxxxing.com charges the accommodation provider a fee, reputed in some circles to be more than 30% of what we pay.
I would rather that money stayed with my host.
At one pilgrim Mass I attended in the Cathedral at Santiago, the chief celebrant,in both Spanish and English, invited any " who are a baptised Christian and who love the Lord" to come forward and receive the Sacrament.
I was quite surprised, but joyfully accepted the invitation.
Oh wow. I did exactly that. I left the small stone I'd brought from my garden in the snow at the base of el Cruz, and picked up a pebble from the roadside and brought it home. It has its little shelf in the garden!
