Since you have to ask this question, then it shows that you do not know how to uses a dSLR or mirrorless camera. It's almost as silly as the question, "What exposure settings should I use for Spain?"
I'd suggest that you take something simpler to use and lighter to carry.

What are the restrictions for mailing a small Opinal knife back to the USA?
I was able to once mail a No. 7 knife from the post office in the Madrid airport. There was a lot of language confusion at the window with the customs forms, but they eventually accepted, and it was delivered in a few...
How many training hikes have you been on with students with a full pack? They'll learn to pack lighter after the first few training hikes! Find this out at home, not on the Camino!

In addition to water, it is vitally important to carry some kind of salty/sweet snack food to replace burned calories and loss of salt by sweating. Always have some food in your pack in case you are not near a cafe.
You can learn how much food and water that you need to carry by training at...
If you wear a waist/fanny pack, you will be immediately become the target of pickpockets! You won't have any trouble on the Camino but will draw attention in travel to/from the Camino through major cities.
Keep your passport, cash and credit cards in a money belt under your clothes.

I love Keen sandals, but the heavy soles weigh too much for the Camino, plus they don't work well in the shower. I carried Crocs which are a lot lighter and work well in the shower.

Loud noises only tell the dog that you are "barking" back! Talk softly to calm the dog down, so the dog will not think you are a threat. Don't make any sudden moves.
A dog that is only barking will most likely not bite. Most dogs growl and show their teeth as a warning before biting.

How did medieval pilgrims walk the Camino without fancy electrolyte powers? Perhaps they knew how to drink the right amount of water and eat the right food to balance energy requirements.
One thing you should explore in training is the right amount of water and food your body requires at a...
If you eat properly, you do not need electrolyte powders. The Camino is not a race. Always carry snacks, such as GORP (Good Ol' Raisin and Peanuts) or your choice of and salt-sweet snacks. Have a bite of sausage, local cheese or chocolate! These items are easily found in local stores.

Your shower test does not test the case of walking 4-6 hours in drizzling rain. That's a lot different that a quick shower. You need to take a walk on a rainy day.

No matter what your rain gear preference is, be sure to try it out a home in a long walk in the rain. Adjust accordingly to your experience.
Do not wait until you get to Spain to try out rain or any other gear! There is no magic poncho.
