I love reading (no, devouring) every crumb of information about the Camino. I did it before my first camino, and I keep doing it every time. I'm not concerned about knowing the practical details in advance, because months of meticulous planning (and dreaming) cannot prepare one for the moment...
For me the shave and haircut I had in Santiago was a step back into the reality of an imminent return to my home and work. It was a ritual shedding of the camino and a very relaxing experience.
I think I went to the same barbershop. I went there in 2014, and received a proper old fashioned shave with a cut throat razor. The chair was of the vibrating kind, so properly fell asleep. Luckily didn't wake up in someone's meat pie.

Certainly worth testing then. I find it has good accuracy up to about 10 metres, but if there are two paths close together to choose from you have to look at the map. Also, the app probably doesn't know the actual Camino route, just the shortest way to get to your destination using footpaths...

I have been using Endomondo for tracking my walks for several years. I do find a difference between using it in airplane mode vs with mobile network connected. I think it records less accurately when used offline. At the moment it doesn't look like you can download and use offline maps with this...
A year ago I happened upon a fiesta in Grañón and one of the stalls was selling freshly made churros. It was very interesting to see the making them from scratch and delicious! Grañón happens to be one of my favourite Camino places.
Yes, alcohol free beer was freely available and much better quality than in England. I often enjoyed cerveza sin alcohol at lunch time as a refreshing alternative to sweet soft drinks.
I have this infection too. My first Camino finished on 1 June and I just couldn't stay away. I'm due to travel to Pamplona on 19 September to "try out my new boots and insoles" for a week.
I quickly learnt to wear flip flops for going up bunk ladders.
About the question: As long as there is an electrical outlet I don't really mind if it is top or bottom bunk. I need it for the CPAP machine.
Edit - I don't really like top bunks without rails.

I have a mini backpack which is quite water resistant. It contained a change of clothes, soap and some valuables which couldn't be left in the dorm. I always found at least one hook in the shower cubicles to hang the bag. Dirty clothes and towel went through the shoulder straps. Worked well.
Edit - just a word if warning: I measured Endomondo with all connections apart from GPS switched off against a friend's tracking device and found it was less accurate. It underestimated the distance. I've since walked the Camino Frances and hardly ever used my phone for navigation. The guidebook...
