At home in the UK I buy good quality Norfolk bred pork from a local butcher. I cook my pork for much less time than my mother would have done. Yes it is slightly pink and delicious! Spain is famous for lovely local pork
I’ve only walked from Valenca/Tui but can recommend it. Lovely walk across the bridge and both interesting towns. Enjoyed the whole route. I thought it was scenic and the towns were all worth a visit.
Perhaps someone has tried to hack your account to get at your payment details. That might result in everything being locked. Hopefully you can access your confirmation emails and good you had printed too.
Based on what others have said on this forum about beds there will be availability and that should not be your worry.
I walked from Valenca to Tui 2 years ago doing about 15-18km a day. It was a lovely route. Took about 6 days. You could start earlier as Trecile said or carry on after Santiago...
