    Very very strong points. While the CdN has plenty of road walking, the alternatives in the off-season can be unsupported and often unwalkable (mud, water, forestry works). Not saying to not try them, just be prepared by carrying adequate supplies and allowing additional time for your distances.

    At that time of year I'd say you could wing it. I often don't book ahead even in busy times and I've never been left out in the cold! If you have a healthy budget it's even easier of course, if pilgrim accommodation is full, which is unlikely.
