do not worry. i have walked in May, and not all the time were the albergues full. but when full, i always asked the older people than i (i was 29) if they want to change their assigned bed, if it was a top bunk.... some of them would not :) others did...

i have no idea about matras, but i know from experience that reciting the prayer of the heart:
"Lord, Jesus Christ, Son of David, have mercy on me, sinner."

last year, i stayed in Seminario Menor, more days.... it was very nice there...
on my second camino this february, some of the pilgrims chose MDG. the problem is you cannot stay more then 5-6 hours in Santiago... you need a place to rest.... or a shower... they basically stayed more in MDG...
