I’m sorry to hear about your issues, just something I learned during my Caminos, hydration hydration hydration, if you think you had enough water drink some more. I’m not diagnosing your issues but painful and swallowing feet it’s a big sign of dehydration.
Don’t over think, just do it what feels right to you, can you finish in 15 days? If you can’t it’s ok it’s always the next time, just enjoy it whatever you do

Most people will do in day, I did, its tiring and you get there it’s like WOW! With that said, my question is why? Take your time, if you injured your self at the beginning you are done ( as I have learned the Camino isn’t a race)
well, if you only doing 12k three times a week, and you are planning to walk every day in the Camino, would be logical to train your legs everyday and I mean walking asides from any other form of exercise just my two cents
from a fitness stand, you should be doing 12km everyday, however if want to do 20km everyday on your Camino you should train with a 15lb pack 25km everyday, its just my opinion
