If you know your model and size you could order them at globetrotter.de, a leading German outdoor-chain. They send parcels to Spain at a rate of 24,50 €, this should be possible within 1-2 weeks or worth to check out with them.
There‘s Camino packing lists all over the internet. I tried the one from stingynomads.com and it worked well for me. As for backpacks: if your stuff fits in one between 35 and 45 Liters you should be fine. Personally love the Osprey Kestrel/Kyte series.
Did it from Berlin. Very comfy and relaxing despite having to change trains three times (Cologne, Paris, Bayonne) and in Paris even between train stations. Nice training walk from Gare du Nord to Montparnasse anyway, if you have the time. This took me around 20 hours but slowed me down enough...
