I am a dedicated skirt hiker, and plump & middle-aged as well. These are brilliant - cheap, soft, cool, comfy, lightweight, breathable, and long enough (I'm 5'2", and they hit right above my knees). They have solved all my chafing problems. And they come in 17 colors as well...
Don't worry about taking the duffel. When you check your bag, ask for a pack sack. The airlines usually have clear plastic bags for awkward items that they will tape up at the top.
I am very sun sensitive too. But I hate sunblock - inconvenient, expensive, feels gross..... and as I get older, it seems to get less effective.
But I also hate hiking in long sleeve shirts - I feel claustrophobic.

This is not super direct, but if you have the time, consider walking east on the Frances to Roncesvalles or SJPDP. Then take either the GR 10 or GR 11 through the Pyrenees (or foothills) along the French/Spanish border to Hendaye/Irun, and begin the Norte from there.

Agree, 100% - there is no one-shoe-fits-all prescription when it comes to finding the right Camino shoe!
My concern was that the OP made a couple of very strong statements against hiking the camino in sandals, but none against hiking in boots - even though it was boots that destroyed her feet...

No, my shoes get wet. I hike in mesh-top trail runners (Brookes Cascadia 9) and hiking sandals (Teva Terra-Fi), and I don't get blisters. (And my footwear dries fairly efficiently.)

Another option is to walk the Norte from Irun to Oviedo. Then hop on a bus from Oviedo to Leon, and walk from Leon back to Oviedo via the Salvador (in the "correct" direction), and then on to Santiago via the Primitivo.
