For me, the best section of the Coastal route was the Spiritual Variant, from Pontevedra to Padron. That is not a weeks worth of foot travel on its own, but I would go back for that section all over again! And you could start back in Vigo or Nigran depending on the distance you want to cover.

crhutch, if you are considering walking the Spiritual Variante, I would highly recommend Hope House in Vilanova de Arosa. Alfonso picked us up in town and gave a lift to their pilgrim house where they prepared and shared a meal with us. And it was the highlight of my journey.
Roadboy, the boat schedules are dependent upon the tides. The albuergue in Vilanova can advise of the timing and sell you a ticket the day before you intend to take the journey. Seats are limited.
