I walked the Camino Frances, The Ingles and had the "aching feet" without blisters for the first few days.
It stopped after a week. I am sure that these are just the short muscles in the foot which are simply not trained enough and get fit over time.

I'd go to a shop where you can wear the shoes for a while to see if they feel good, In case of doubt between two> go for the lighter one.

I would recommend that you simply try the boots and socks you will own already on a "dummy-March": a long weekend at your home area.
I did this in preparation of my first camino. Full backpack with some big water bottles in it for the weight and a 20kilometer march.

Re: "where the weather is more stable" Santiago lies in Galicia where the weather is very versatile. There is a good chance that you have good use for the gaiters towards the end of your way.

Just from my perspective after two Caminos and walking long distances in Great Britain and the Alps.
Gaiters are fine against dust and mud. Against rain they are only useful long term if you have also over trousers and a poncho.
All the stuff should be GoreTex or similar breathable textile...
I had bought some three meters of elastic rope (four millimeters thick). Together with a couple of unexpensive carabiner snap hooks (help to secure stuff to backpack at daytime) it makes a clothing line in between beds, fence posts......

I can only speak for myself
I used to carry a sleeping bag liner on my first stage of the first camino. I felt it was useless dead weight in my backpack and left it after a few days in an albergue. It always slipped down in my sleeping bag.
Instead of a pajama I used a pair of underpants...
