On this day in 2019 we arrived at Santiago on our first Camino, having started at Baiona. We were too late to get Compostelas and had to wait till the next day for them.
Portuguese Coastal could fit your requirements. Five days at 15km a day is 105km - just enough for a Compostela. This means starting at Vigo. Less than 100km equals no Compostela. If a Compostela is not essential start at Pontevedra.
I had a Similar problem a couple of years ago. There was a good offer but it did not cover any walking above 6000ft (1800m). The stroll between Kleine Schiedegg and Mannlichen would not have been covered.

Do check the fine print! One policy that I was offered excluded walking on recognized paths above 2000m. The Gt St Bernard pass on the VF goes up to 2469m....
