How about from Airapadron to Samos. The view as you look down on the monastery and walk into Samos is stunning. The walk from Airapadron is less than 5k and takes about an hour. That would leave her fresh enough to visit the monastery if you wanted to do that.
You can take a bus or taxi from SJDP if you choose not to walk to Roncesvalle. IMO Orrison is too close to SJDP to stop on the first night. Start early and walk all the way to Roncesvalle....
Be careful what you wish for. The "big room" has such high ceilings that all sounds transmit and echo. The snoring at night is truly a symphony, a symphony you don't want to hear. Make sure to bring earplugs or earbuds!
35 days should be enough to start in SJPP if you want to. If possible, I'd do all my visiting after the Camino: you'll have so much to tell your friends, and it will reduce feeling time-pressured during your Camino.

I would advise people not to stay at Orisson. We reached Orisson in less than three hours - about the time you're just getting into it. Also, by the time you reach Orisson the steepest uphill is over and things start to level out. Just my two cents worth.

You can always walk the road down from Cruz de Ferro but of course that has its own hazards - getting flattened by a car or tour bus. The shale gullies down to El Acebo were quite unpleasant. Wouldn't want to do it in rain
