Wine is almost always included in the menu del dia. Sometimes even a whole bottle. I haven't walked from Sarria but last year I was paying €11 for a menu del dia in non-touristy Asturias. The bus station in Oviedo did menu del dia with a half-bottle of wine for €13.50.
Most of the time what you need cash for are small purchases. Many cafes have minimum amount for card transactions. Coffees, drinks and snacks are cheap, so it you are travelling alone it can be hard to meet build up a €10 bill before it's time to move on.

I would think you might be lucky and find at least one English-speaking member of staff at the Correos in Pamplona, but no-one in this forum can really tell. There is no guarantee. Usually in these situations I prepare what I want to say in advance.
How much data you use will depend on what you do with your phone. Personally my data usage wouldn't be any different to what I use at home, because I would use my phone for similar things.

Just make sure you take a good look at the map to see exactly where the accommodation is. Booking.com has a map search facility that you can zoom in, so it's not too difficult.
It shouldn't be difficult. Usually hotels and pensions have other tourist business so open all year round. Of course if there is a local festival or event, you might have difficulty on a particular date.

The important thing is how long the walk takes (including stops) because that is what you'll be doing. Anyway, it sounds like you shouldn't have any problem walking 18-22km a day if you need to. Of course, you don't have to do it...
You are unlikely to find the perfect length of day every day. When planning I aim for an average distance. Some days longer, some shorter. For instance, some days you will have the choice to walk 11km or 20km. If you insist that all days are less than 15km, your progress will be quite slow.
